    Last night, I had the most amazing vegetarian meal made my boyfriend Alex! He stuffed huge organic bell peppers with spicy lentils, a spicy pepitas sauce (made with raw pumpkin seeds, Thai bird chilies, and other dried chilies), roasted them, and served them with a side of sweet potato and kaboucha squash mash (made with orange juice/zest, cinnamon, and cardamom), and a baby spinach salad with tomato, green beans (from our friend’s garden), spring onion, raw pepitas, and lime vinaigrette. It was going to be vegan, but at the last minute, I decided to make lime and cilantro non-fat yogurt to neutralize some of the spices going on in his dish.
T’was a good choice, cuz the meal was absolutely delectable!
